Spareribs and Garlic Sprout Spicy Curry

House Java Curry (Med.Hot) 1 box (6.52 oz)
2 lbs spareribs
pepper to taste
2 medium (14 oz) onion
1 (7 oz) Carrot
3.5 oz garlic sprouts
2 1/2 tbsp (1 oz) salad oil
6 cups (1500 ml) Water


1. Sprinkle spareribs with pepper. Thinly slice the onions. Cut carrots into bite-size pieces.
2. Heat 1 tbsp of salad oil in a skillet. Place spareribs into skillet and brown the surface.
3. Heat 1 1/2 tbsp of salad oil in a sturdy pot. Saute onions and carrots and add spareribs and water. Simmer on low to medium heat for approx. 40 min, skimming foam from surface as necessary.
4. Momentarily turn off the heat from the pot. Break up House Java Curry roux and add to the mixture. Mix well while cooking over low heat for another 10 min until sauce thickens. Lastly, add the garlic sprouts (cut into 1 in. lengths) and bring to a boil.
